Spring is finally here! That means warm weather, brighter colors and new spring recipes. Eating right and staying healthy is easy in the spring because spring brings us lots of different fruits and vegetables to choose from. Here are some great recipes to try this spring…

 

  • Quinoa Salad with Roasted Red Grapefruit and Artichokes

 

Making use of both grapefruits and artichokes being in season, this delicious recipes brings a perfect mixture of color and flavor. The recipes has five simple steps. First step is to heat and simmer the quinoa, this takes around 15-20 minutes. While the quinoa is cooking, place the red grapefruit in a pan in the oven on 400 degrees and bake for ten minutes. In a large bowl, mix artichokes and lettuce together. Once the quinoa is done, mix that in the bowl as well. When the grapefruits are done baking simply removed the outer edge and squeeze the juices over the large bowl. Once there is no juice left, place them in the bowl with a little olive oil, salt and pepper and you have a delicious meal sure to satisfy!

 

  • Spinach Roll Ups

 

This Spring vegetable sure makes for a tasty appetizer. Whether you are needing a snack or want to add a little class to your next dinner party, these spinach roll ups are the perfect food. Simply combine sour cream, cream cheese, light mayo, onions, bacon and salad dressing. Stir in the spinach and make sure everything is well blended. Simply place on a tortilla and cut in half and you have a delicious appetizer.

 

  • Sugar-Free Strawberry Frozen Yogurt

 

If you are looking for a sweet but healthy dessert, this recipe is for you. Combine strawberries and sweetener in a food processor until it is chopped well. Add yogurt and lemon juice to the food processor until it is smooth and creamy. And that is it! You have a tasty strawberry dessert that you don’t have to feel bad about.
